ok, so i've been unsuccessfully trying to make a cheese sauce out of brie, i tried doing it like you would with cheddar but it doesn't turn out quite right...any suggestions?

I've never heard of a cheese sauce being made from brie, so it mustn't have the right consistency for that. What happened when you tried to make the saucse...did the cheese clump or separate, or what?

If you want to use cheese other than cheddar and american, you could try gruyere, mozarella or fontina. The last two actually blend well together.

It's not that it separated or clumped, it just wouldn't...stay together...if that makes any sense, the only reason i was trying it was because a certain restaurant has a steak that the put on top of a brie and bleu cheese sauce, maybe the bleu does something to it, but i don't know. and i have made sauces out of mozzarella and gruyere , i just thought that maybe the brie would taste better on some foods that i make...
